Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main flavor and body of the soup as it simmers.
Flour
Coats the meat so it browns, and later thickens the soup.
Onions
Add sweetness and savory depth, and their skins contribute color to the broth.
Celery
Adds aromatic flavor to the simmering broth.
Carrot
Adds sweetness and body to the broth as it cooks.
Turnip
Adds mild sweetness and body to the broth as it cooks.

The step that matters

Fry the dredged meat with the onions until browned. Browning through the Maillard reaction builds deep, roasted flavor and color in the broth. Pale meat yields a flatter, less colorful soup, so the meat should be well browned before liquid is added.

Swap the onion

How well each one fits the dish's main ingredients (beef, meat, celery, flour, pepper, turnip, carrot):

Fit is the average pairing score against beef, meat, celery, flour, pepper, turnip, carrot. Candidates are from the same food group and used in at least 100 recipes.
