Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Chop the ham, mutton, and parboiled onion finely.

  2. Line patty pans with puff pastry.

  3. Mix the meat with herbs, stock, pepper, and salt.

Assemble and bake

  1. Fill the patty pans with the meat mixture and cover with puff pastry.

  2. Make a hole in each pie.

  3. Brush the pies with milk.

  4. Bake at 400°F (200°C) for about 20 minutes.

Serve

  1. Heat the gravy and season it to taste.

  2. Pour the gravy over the pies when they are done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Forms the main meat filling and adds richness and savoury flavour.
Ham
Adds salty, smoky depth to the savoury meat filling.
Puff pastry
Its layers puff with steam to form a flaky, crisp crust.
Stock
Adds moisture to the filling so it stays juicy after baking.
Milk
Brushed on top, it helps the pastry brown evenly in the oven.

The step that matters

Make a hole in each pie. Cutting a vent lets steam escape while the pastry bakes. Without it, trapped steam can swell the crust unevenly or burst it, and the filling may cook unevenly.

Swap the onion

How well each one fits the dish's main ingredients (mutton, ham, pepper, milk):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against mutton, ham, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
