Ingredients

Directions

Prepare the head

  1. Clean the ox head and soak it in saltwater for several hours.

  2. Wash the head, remove the brains, and boil it for 5 to 6 hours with allspice, peppercorns, and mace.

  3. Remove the head, cut the meat into small pieces, and strain the gravy.

Make and set the potted head

  1. Combine the meat and gravy in a clean pot, adding more seasoning, pepper, and salt if necessary.

  2. Ensure all small bones are removed, then boil for about 10 minutes.

  3. Pour the mixture into china basins or molds and let it cool.

  4. Once cold, turn out the potted head and garnish with parsley, cut tomato, or beet.

What each ingredient does

Ox head
Provides the meat and natural gelatin that bind the potted head as it cools.
Coarse sea salt
Seasons the meat and helps draw out blood during the saltwater soak.
Allspice
Adds warm, aromatic spice flavor to the boiled meat and gravy.
Peppercorns
Contribute sharp, aromatic heat that seasons the meat during long boiling.
Mace
Adds a delicate, warm aroma that complements the savory meat.

The step that matters

Removing the small bones. Small bones left in the meat are hard to notice once it is chopped and set, and they can be unpleasant to bite into. Checking carefully before the final boil keeps the set potted head smooth and safe to eat.
