Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Top with breadcrumbs.

  3. Prepare a white sauce using butter, flour, and the oyster liquor, and season it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main briny flavour and tender texture in the filling.
Breadcrumbs
Absorb juices and add body, helping layers hold together while baking.
White sauce
Adds moisture and richness, keeping the layered pie from drying out in the oven.
Remains of cold fish
Forms the flaky, savoury bulk of the pie filling.

The step that matters

Pour the white sauce over the layers. The sauce must be evenly distributed so the breadcrumbs and fish are moistened; dry spots will stay parched while the baking dish cooks through.

Swap the nutmeg

How well each one fits the dish's main ingredients (fish, oyster, pepper, parsley, sauce, butter, flour):

  1. Capersfits better
  2. Tarragonfits about as well
  3. Thymefits about as well
