What each ingredient does

Eggs
Yolks enrich the base; folded whites lighten and puff the fondue as it bakes.
Cheese
Melts into the sauce to give the fondue its rich flavour and body.
Flour
Thickens the milk and butter into a smooth sauce base.
Milk
Forms the liquid base that the flour thickens.
Butter
Adds fat and richness to the sauce base.

The step that matters

Cool the sauce before adding the egg yolks. If the sauce is too hot, the yolks can scramble instead of blending smooth, so letting it cool slightly protects the texture.
