Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Potato Mould

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mash the potatoes with butter and a little milk until smooth but not wet.

  2. Season with coarse sea salt and decorate with chopped parsley.

  3. Press the mixture into a greased mold and bake at 350°F (175°C) for 30 minutes.

  4. Before serving, dust with bread crumbs or grated cheese.

  5. Garnish with beetroot and cut lemon.
