Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Vegetable Marrow Stuffed

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the marrow

  1. Skin the vegetable marrow and cut a piece out of the side to remove the seeds.

  2. Stuff the marrow with forcemeat.

Cook the marrow

  1. Stew it in a rich sauce or bake it in the oven at 350°F (175°C) for 1 to 1.5 hours.

  2. If baking, egg the stuffed marrow and sprinkle with bread crumbs before serving.

  3. Alternatively, boil the marrow plainly and serve with boiled bacon, butter, and parsley separately.

Make the beans

  1. For the beans, boil them until nearly tender, then drain.

  2. Combine the beans with stock, herbs, and a little sugar, and stew until tender.

  3. Beat the egg yolk with cream and add it to the beans and stock, heating until nearly boiling before serving.

What each ingredient does

Vegetable marrow
Forms the edible shell that holds the stuffing and softens during stewing or baking.
Forcemeat
Fills the marrow and adds savory body and flavor as it cooks.
Egg
Coats the top when baking, helping the crumbs brown and stay in place.
Bread crumbs
Form a crisp, browned topping when the stuffed marrow is baked.
Egg yolk
Enriches the bean sauce and thickens it gently when heated with cream.
Cream
Adds richness and smoothness to the bean sauce.

The step that matters

Heating the egg yolk and cream into the beans. Egg yolk thickens when heated but can curdle or turn grainy if it boils, so the mixture should be heated only until nearly boiling.

Swap the beans
