Ingredients

Directions

  1. Keep a special pan clean by wiping it with paper and a dry cloth instead of washing.

  2. For omelets, use whole eggs and beat them lightly to allow the mixture to set easily for folding.

  3. For omelet souffles, beat the yolks and whites separately, making the whites very stiff, and add them last to the other ingredients.

  4. Heat the frying pan evenly but not so hot that it colors the butter.

  5. For an omelet, use bottom heat only. Fold it in half or roll it before removing from the pan while the top is still slightly soft.

  6. For omelet souffles, apply top heat after the bottom is cooked, using a salamander or placing the pan in a hot oven for a minute or two.

  7. To serve, slip a broad knife under the omelet and lift, letting the sides fall over so the top is on the outside.

  8. Serve omelets and omelet souffles on a warm dish, covered with a warm lid, immediately.
