To Preserve Oranges

Ingredients

Directions

Prepare

  1. Peel the oranges very thinly or grate off the rind.

  2. Wash the oranges and soak them in cold water for 24 hours, changing the water twice.

  3. Cut the oranges into halves, quarters, or thick slices, removing the seeds.

Cook

  1. In a large pot, add the oranges and the 24 quarts of water, and boil without stirring for 3 hours.

  2. Add the sugar and boil for 1½ hours longer, stirring gently until the sugar is dissolved.

  3. Skim off any foam that forms on the surface.

Rest

  1. Let the preserved oranges sit for several days before using.

Orange and sugar barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

What each ingredient does

Oranges
Provide the fruit and bitter peel that become the preserve itself.
Sugar
Sweetens the fruit and helps preserve it, giving it a thick, glossy syrup.

The step that matters

Boil without stirring for 3 hours. Stirring during the long initial boil can break up the fruit and cloud the syrup. Gentle, undisturbed simmering keeps the slices intact and the liquid clear.
