Fillets of Cod a LA Normande

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 350°F (175°C).

  2. Melt butter in a pan and sauté chopped onions and mushrooms until soft.

  3. Add white wine and let it simmer for a few minutes.

  4. Place the cod fillets in a baking dish and pour the onion and mushroom mixture over them.

  5. Drizzle cream on top and season with coarse sea salt and black pepper.

  6. Bake for 20-25 minutes until the fish is cooked through.

  7. Garnish with chopped parsley before serving.
