What each ingredient does

Cod's head
Provides the main fish flavour and body for the soup.
Consommé
Forms the liquid base of the soup, carrying the herb and fish flavours.
Sherry
Adds acidity and a warm, aromatic sweetness to the soup.
Corn flour
Thickens the soup as it boils, giving it a fuller body.

The step that matters

Adding the corn flour mixture. Corn flour must be mixed smoothly with cold water first and then stirred into the hot soup, because dumping it in dry or lumpy causes clumps. Boiling for the stated time then fully cooks the starch so it thickens evenly and loses its raw taste.

Swap the lemon
