What each ingredient does

Tomatoes
Hold the filling as a shell and soften into juicy, tender cups when fried.
Egg yolks
Bind the filling and set lightly with heat, giving it a creamy, cohesive texture.
Button mushrooms
Add moisture and savory, earthy flavor to the filling once fried.
Breadcrumbs
Form a crisp, golden topping through browning in the hot fat.
Bacon
Adds fat and smoky, savory flavor that carries through the filling.

The step that matters

Scooping out the tomatoes without breaking the skin. The skin is the only container holding the filling. A torn skin lets juices and filling leak into the pan, so the tomato collapses and the filling dries out or burns.

Swap the tomato

How well each one fits the dish's main ingredients (butter, mushroom, parsley, chive, ham, egg):

  1. Shallotfits better
  2. Leekfits better
  3. Asparagusfits better
  4. Tomatothe original

Fit is the average pairing score against butter, mushroom, parsley, chive, ham, egg. Candidates are from the same food group and used in at least 100 recipes.
