Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ham and Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. In a pie dish, layer the ham and veal slices alternately.

  3. Place a row of sliced hard-boiled eggs on each layer of veal.

  4. Season each layer of veal with salt, pepper, and a sprinkling of parsley.

  5. Pour Veal Consommé over the layered ingredients until just covered.

  6. Cover the pie with pastry and seal the edges.

  7. Bake in the preheated oven until the pastry is golden brown.
