Ingredients

Directions

  1. Butter and line a pudding basin with Pudding Paste, ½ inch thick.

  2. Fill the basin with alternate layers of fillet of beef and thinly sliced kidneys, seasoning each layer with pepper, coarse sea salt, and chopped herbs.

  3. Alternatively, roll kidney and fat inside each slice of fillet, seasoned with pepper, coarse sea salt, and herbs, then fill the pudding.

  4. Add Brown Sauce and cover the bottom with a layer of paste.

  5. Tie the pudding securely in a well-buttered cloth and boil in a stewpan for 2.5 hours.

  6. Remove the cloth, turn the pudding out onto a dish, and serve with Fine Herbs Sauce or good Stock.
