What each ingredient does

Rice
Swells in milk and sets as it cools, giving the croquettes their body and firm shape.
Milk
Cooks into the rice, swelling the grains and adding moisture and softness to the mixture.
Egg
Enriches the mixture and, as a beaten coating, helps bread crumbs stick and brown.
Sugar
Adds sweetness and helps the golden browning of the fried outer coating.
Bread crumbs
Form a crisp, browned outer crust when the croquettes are fried.

The step that matters

Cooling the rice mixture fully before shaping. Warm rice is soft and sticky, so it will not hold its shape and may break apart in the hot fat. Cooling lets the starch set so each croquette keeps its form while frying.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, egg, sugar, bread):

  1. Vanillafits better

Fit is the average pairing score against rice, milk, egg, sugar, bread. Candidates are from the same food group and used in at least 100 recipes.
