Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the main meat, which browns in butter for flavour and stays tender when simmered in the sauce.
Onions
Soften and sweeten as they fry, adding body and savoury depth to the sauce.
Apple
Softens into the mixture when fried and sieved, adding mild sweetness and body to the sauce.
Ground rice
Thickens the sauce as it heats, giving it a smooth, body-rich texture.
Curry powder
Supplies the spice blend that gives the sauce its characteristic aroma and flavour.

The step that matters

Sieving the apple and onion mixture. Passing the soft fried mixture through a sieve removes fibrous bits so the sauce is smooth. Thickening with ground rice relies on even dispersion, so lumps left in can make the sauce grainy.

Swap the apple

How well each one fits the dish's main ingredients (pork, butter, onion, rice):

  1. Coconutfits better
