Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Soak and prepare the sweetbreads as directed for calf’s sweetbreads.

  2. Dry the sweetbreads, then dip them in beaten egg and coat with bread crumbs.

  3. Place the sweetbreads on a baking dish and add small lumps of beef dripping around them.

  4. Bake in a moderate oven at 350°F (175°C) for 45 minutes, basting frequently.

  5. Serve on slices of toast with rich brown gravy.
