What each ingredient does

Stale bread
Thickens the milk and gives the sauce its body as it softens and swells.
Milk
Forms the liquid base, and its proteins give the sauce a soft, creamy texture.
Butter
Adds richness and a smooth, silky mouthfeel when melted in at the end.
Onion
Infuses the milk with a mild savory aroma and flavor while it simmers.

The step that matters

Stirring constantly while it heats. Milk scorches easily on the bottom of a pan, and bread settles and sticks as it thickens. Constant stirring keeps heat even and prevents burning.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (bread, onion, milk, butter):

  1. Garlicfits better
  2. Cinnamonfits about as well
  3. Thymefits about as well
