Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal breast
Forms the main body of the roll and gives the galantine its meaty structure.
Hard boiled egg yolks
Pounded to a paste, they add richness and a smooth, binding texture to the stuffing.
Egg
Brushed over the veal, it helps the layers of the roll adhere together.
Powdered herb stuffing
Absorbs moisture and helps the filling hold its shape within the roll.
Truffles
Contribute a deep, earthy aroma to the filling.
Lean ham
Adds savoury flavour and a firmer, meaty layer within the roll.

The step that matters

Simmer slowly for 7–8 hours. A gentle, low simmer cooks the tightly rolled meat through evenly and keeps it tender. A hard boil can toughen the meat and break up the rolled shape.

Swap the mace

How well each one fits the dish's main ingredients (veal, egg, pepper, parsley, sauce, truffle, mushroom):

  1. Thymefits better
  2. Tarragonfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against veal, egg, pepper, parsley, sauce, truffle, mushroom. Candidates are from the same food group and used in at least 100 recipes.
