Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the dough into rounds or ovals.

  2. Place the shapes on a greased baking tin.

  3. Spread a thin layer of icing mixed with a little orange-flower water on each piece.

  4. Sprinkle with chopped pistachio nuts or almonds.

  5. Bake in a moderate oven at 350°F (175°C) for about 20 minutes.

  6. Brush with liquid icing as they come out of the oven; it will set as the biscuits cool.
