Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the butter in cold water if using salted butter, washing it several times to remove salt.

  2. Beat the butter in a strong basin with a wooden spoon until it resembles Devonshire clotted cream.

  3. Prepare a hoop by using a 6-inch wide slip of tin, fastening it with copper wire.

Make the batter

  1. Gradually add sugar, flour, and eggs, mixing thoroughly after each addition.

Bake

  1. Line the hoop with buttered paper and pour in the batter.

  2. Bake in a preheated oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar, it traps air and gives a rich, tender crumb.
Sugar
Sweetens the cake and helps it brown while baking.
Flour
Forms the main structure that holds the cake together as it sets.
Eggs
Add structure, moisture and richness, and help bind the batter.

The step that matters

Adding the eggs gradually and mixing thoroughly after each addition. Adding eggs slowly lets each one emulsify fully into the butter. Adding them too fast can make the batter curdle, which leads to a coarse, heavy crumb.
