Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Asparagus Heads with Forcemeat
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the asparagus heads.
Fill the inside with forcemeat and small pieces of veal or mutton mixed with sweet herbs, pepper, salt, and lemon juice.
Cover with more forcemeat.
Brush with yolk of egg.
Bake at 400°F (200°C) until done.
Turn out gently into a deep dish, remove the bacon, and make a small hole at the top.
Add a small quantity of good cullis.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
