What each ingredient does

Beef
Forms the body of the hash, becoming tender as it stews in the sauce.
Fresh butter
Cooks the shallots or onions gently, adding richness and fat to the sauce.
Veal stock or gravy
Provides the liquid base of the sauce, adding savory depth and moisture.
Shallots or onions
Add sweetness and aroma as they soften into the sauce.

The step that matters

Boil for 10 minutes, then season. Boiling reduces and concentrates the stock, so seasoning should follow the reduction. Salt and cayenne added before the liquid thickens may taste too strong once it cooks down.
