Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rump of beef
Forms the main body of the dish and becomes tender through slow stewing.
Suet
Adds fat that keeps the stuffed filling moist and rich during cooking.
Boiled chestnuts
Add a soft, starchy texture to the stuffing and gravy.
Butter
Browns the floured beef when frying and enriches the gravy.
Flour
Browns the floured beef and thickens the gravy when rolled into butter.
Onion
Adds savoury depth and aroma to the stuffing.

The step that matters

Thicken the gravy with butter rolled in flour. Flour mixed with butter must be cooked into the hot liquid and brought to a boil, or the gravy stays pasty and floury-tasting instead of smoothly thickened.

Swap the lemon

Fit is the average pairing score against beef, flour, butter, chestnut, anchovy, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
