Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Bind the stuffing so it holds together when cooked.
Beef marrow
Adds richness and moisture to the stuffing.
Bread crumbs
Absorb juices and give the stuffing body.
Apples
Add moisture and a tart sweetness that balances the rich goose.
Flour
Thickens the gravy into a smooth, coating sauce.

The step that matters

Remove the goose and keep it warm before finishing the gravy. Fat is skimmed from the gravy while the bird rests, so the meat stays hot and juicy and the sauce can be thickened without overcooking the goose.

Swap the apple
