Chicken or Rabbit Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken pieces with salt and pepper.

  3. Cover the bottom of a pie dish with puff pastry.

  4. Spread a thin layer of forcemeat around the sides of the dish.

  5. Layer the seasoned chicken pieces in the dish.

  6. Add the sweetbread, truffles, morels, artichoke bottoms, and chopped egg yolks on top.

  7. Pour in enough water to nearly fill the pie.

  8. Cover the pie with puff pastry and bake until golden brown.

  9. Once baked, pour in a rich gravy thickened with flour and butter.
