Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and body, giving the set custard a smooth, creamy texture.
Whites of 6 eggs
Egg proteins set when gently heated, thickening the mixture into a light, sliceable cream.
Green tea
Adds its distinct grassy, bitter aroma and flavour to the cream.
Sugar
Sweetens the cream and balances the tea's bitterness.

The step that matters

Whisk over low heat until thickened. Egg whites set at moderate temperatures and can curdle or turn grainy if overheated. Keeping the heat low and whisking constantly lets the proteins thicken the cream evenly and smoothly.

Swap the coriander

How well each one fits the dish's main ingredients (cream, cinnamon, lemon, sugar, green tea, egg):
