Why it works: Wine and vinegar are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 3,493 recipes. Both carry sotolon, which smells curry, maple. The science ↓
Raspberry Vinegar Water
Ingredients
Directions
Infuse the raspberries
Place 1 pound of raspberries in a bowl and pour 1 quart of white wine vinegar over them.
The next day, strain the liquid over another pound of fresh raspberries without squeezing the fruit.
Drain the liquid as dry as possible and pass it through a canvas wetted with vinegar.
Sweeten and bottle
In a stone jar, combine the strained liquid with 1 pound of sugar for every pint of juice, stirring until melted.
Simmer the jar in a saucepan of water or on a hot hearth, skimming as needed.
Once cooled, bottle the mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Raspberries
- Provide the main fruit flavour and aroma that the vinegar draws out.
- White-wine vinegar
- Extracts the fruit's flavour and provides the sharp acidity of the finished drink.
- Sugar
- Sweetens the infused liquid and balances the vinegar's acidity.
The step that matters
Simmering the sweetened liquid. Sugar must fully dissolve before heating, and gentle simmering in a water bath keeps the mixture from scorching or boiling hard, while skimming removes foam and impurities that would cloud the syrup.
