What each ingredient does

Mutton loin
Provides the meat and fat that flavour the broth as it simmers.
Water
Serves as the liquid that extracts flavour and gelatin from the meat.
Upper crust of bread
Adds body and helps thicken the broth slightly as it softens.
Mace
Contributes a warm, aromatic flavour to the broth.

The step that matters

Skimming the foam after boiling. Foam contains coagulated proteins and impurities that would cloud the broth and taste bitter if left in. Removing it early keeps the broth clear and clean-flavoured.

Swap the mace

How well each one fits the dish's main ingredients (mutton, bread):

  1. Pepperfits better
  2. Garlicfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against mutton, bread. Candidates are from the same food group and used in at least 100 recipes.
