Ingredients

Directions

Prepare the juice

  1. Gather currants on a dry day when ripe.

  2. Strip currants into a large pan and bruise them with a wooden pestle.

  3. Let the mixture stand for 24 hours to ferment.

  4. Strain the mixture through a fine sieve without touching the liquid.

Make the wine

  1. Stir in 2½ pounds of sugar for every gallon of liquid.

  2. Transfer the mixture into a vessel and add 1 quart of brandy for every 6 gallons.

  3. Let it stand for 6 weeks.

Clear and bottle

  1. If clear, bottle it.

  2. If not clear, draw it off into another vessel and bottle it in a fortnight.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Currants
Provide the fruit, acids and flavour that form the base of the wine.
White sugar
Feeds the fermentation and sets the sweetness and body of the finished wine.
Brandy
Added fortifying spirit that raises alcohol content and helps preserve the wine.

The step that matters

Straining without touching the liquid. Pressing or disturbing the pulp pushes solids and cloudy material through the sieve, which leaves the wine hazy and more prone to spoilage. Letting the juice drain by gravity keeps the wine clearer.

Swap the currant

How well each one fits the dish's main ingredients (sugar, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Currantthe original

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
