Eggs and Bacon in Flummery
Ingredients
Directions
Color part of the flummery pink with food coloring.
Dip a potting pot in cold water and pour in a layer of red flummery, the thickness of a coin.
Add a layer of white flummery of the same thickness, then another layer of red, and finally a thicker layer of white on top.
Ensure each layer is stiff and cold before adding the next.
In five tea cups, place a large spoonful of white flummery into each and let them sit overnight.
Turn the flummery out of the potting pot onto the back of a wet plate.
Cut the flummery into thin slices and arrange them on a china dish.
Turn the flummery from the cups onto the dish and remove a bit from the top of each.
Place half a preserved apricot in each indentation to resemble poached egg yolks.
Garnish with edible flowers.
