Why it works: Shallot and capers match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 405 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
A Souties of Salmon, with Capers
Ingredients
Directions
Butter a sauté pan and sprinkle it with chopped parsley, shallot, mushrooms, pepper, and salt.
Set the pan on the stove for about five minutes.
After three minutes, turn the salmon and let it cook for the same amount of time.
Remove the salmon and place it around the dish.
Scrape the herbs into a saucepan, add a little coulis and chopped capers, and bring to a boil.
Pour the sauce in the middle of the dish with the salmon.
