Mutton Cutlets Larded, and Sorrel Sauce

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Lard the mutton cutlets with strips of fat.

  3. Season with salt and pepper.

  4. Broil the cutlets until cooked to your liking.

  5. For the sorrel sauce, melt butter in a pan, add chopped sorrel, and cook until wilted.

  6. Serve the cutlets with the sorrel sauce on top.
