Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the partridges

  1. Draw in the legs of the partridges and season the inside with pepper, salt, chopped parsley, shallot, thyme, and mushrooms.

  2. Singe the partridges.

Assemble the pie

  1. Place beef steaks or slices of veal at the bottom of a dish.

  2. Add the partridges.

  3. Pour in the stock.

  4. Cover the rim of the dish with puff pastry.

  5. Seal it with more pastry on top.

  6. Brush the top with beaten egg.

Bake

  1. Bake for over an hour at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridges
Provide the main meat, cooked whole so the flesh stays moist inside the pie.
Beef steaks or veal
Lie beneath the birds, adding savoury meat flavour and juices to the filling.
Stock
Adds moisture and savoury depth, keeping the filling from drying out as it bakes.
Puff pastry
Forms the flaky crust that seals in the filling and browns in the oven.
Egg
Brushed on top, it promotes a glossy golden browning on the pastry.

The step that matters

Sealing the pastry. The pastry seal must be tight so steam and juices stay inside the dish. A loose seal lets the filling dry out, while the pastry must still rise and brown properly in the oven.

Swap the shallot

How well each one fits the dish's main ingredients (pepper, parsley, thyme, mushroom, beef, egg):

  1. Shallotthe original
  2. Carrotfits about as well
  3. Spinachfits less well
