Blond De Veau, or Veal Gravy, or Brown Stock

Ingredients

Directions

Prepare the pan

  1. Butter the bottom of a thick stewpan.

  2. Layer the buttered pan with slices of York ham.

  3. Add pieces of veal on top.

  4. Moisten with enough stock to cover the meat halfway.

Brown and reduce

  1. Cook over a brisk fire, watching closely to prevent burning.

  2. When moisture reduces, pierce the meat to release gravy.

  3. Reduce the liquid to a glaze.

  4. Place the pan on red‑hot ashes to avoid burning.

  5. Stir continuously for even coloring.

  6. Turn the meat occasionally to prevent sticking.

  7. Moisten with hot broth if it starts to stick.

Finish and strain

  1. Season with mushrooms, parsley, and green onions.

  2. Boil for an hour and a half.

  3. Remove fat.

  4. Strain the gravy through a silk sieve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that releases juices and flavour into the gravy as it cooks.
York ham
Lines the pan and adds salty, savoury flavour to the gravy base.
Hot broth
Adds liquid that loosens the browned sticky layer and builds the gravy's body.
Mushrooms
Add earthy savoury flavour to the finished gravy.
Butter
Greases the pan so the meat and ham do not stick at the start.

The step that matters

Reducing the liquid to a glaze over a brisk fire. The liquid must thicken and brown without scorching. Sugars and proteins caramelise at high heat, so the pan can burn quickly. Stirring, turning, and adding broth prevent sticking and give an even colour and rich flavour.

Swap the parsley

How well each one fits the dish's main ingredients (ham, veal, mushroom, onion, butter):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleythe original
  4. Celeryfits about as well

Fit is the average pairing score against ham, veal, mushroom, onion, butter. Candidates are from the same food group and used in at least 100 recipes.
