Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of mutton
Is the main joint that is braised until tender and then glazed.
Fat bacon
Larded through the meat, it adds fat and savoury flavour as it melts during cooking.
Veal
Adds body and savoury depth to the braising liquid, which becomes the gravy.
Consommé
Provides the liquid for braising, which reduces into a flavourful glaze.

The step that matters

Reduce the gravy to a glaze. Reducing concentrates flavour and thickens the liquid through evaporation. Boiling too hard or too long can scorch the sugars and make the glaze bitter or overly salty.

Swap the mace

How well each one fits the dish's main ingredients (mutton, veal, carrot, onion, clove):

  1. Celeryfits better
  2. Cuminfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against mutton, veal, carrot, onion, clove. Candidates are from the same food group and used in at least 100 recipes.
