Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Roast pheasant meat
Provides the main body and flavour of the filling.
Egg yolks
Enrich the filling and bind it, helping it hold together when set.
Egg whites
Whipped to add air, lightening the filling's texture.
Butter
Adds richness and moisture to the filling.
Roast potatoes
Add body and moisture to the filling, softening its texture.
Bread crumbs
Form a crisp, golden coating when the rolls are baked or fried.

The step that matters

Folding in the whipped egg whites. Whites hold air only while whipped; overmixing or stirring them in vigorously deflates the foam, leaving a dense filling. Fold gently so the mixture stays light and the rolls set evenly.

Swap the potato

How well each one fits the dish's main ingredients (pheasant, meat, butter, egg, sauce, flour, bread):

  1. Shallotfits better
  2. Leekfits better
  3. Asparagusfits better
