Salmi of Woodcocks a LA Lucullus

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Melt the butter in a pan.

  2. Add the chopped shallot and sauté until soft.

  3. Mix in the yolk of the egg, season with pepper, salt, nutmeg, and cayenne.

  4. Combine the mixture well and spread it on the fried bread pieces.

  5. Shape the mixture to rise in the middle like a halved egg.

  6. Bake in a 400°F (200°C) oven for about 5 minutes before serving.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
