What each ingredient does

Leverets
Provide the lean meat that is larded, marinated, and baked as the main dish.
Bacon
Adds fat and savory flavor to the lean meat as it cooks.
Vinegar
Acidity in the marinade tenderises the meat and adds a tangy flavor.
Onion
Flavors the marinade with aroma and mild sweetness.

The step that matters

Covering the fillets with paper while baking. Lean game meat dries out easily in dry oven heat. The paper traps moisture and steam around the fillets, helping keep them tender and juicy.
