Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ingredients
Directions
Prepare the cabbage
Slice the cabbage crosswise.
Sprinkle a handful of coarse sea salt over the cabbage.
Cover with another dish and let it stand for 24 hours.
Drain the cabbage in a colander and place it in a jar.
Pickle and seal
Add enough white wine vinegar to cover the cabbage.
Add a few whole cloves, a little mace, and allspice.
If using, add bruised cochineal.
Boil the mixture and pour it hot or cold over the cabbage.
If poured hot, let it cool, then seal the jar for storage.

What each ingredient does
- Cabbage
- The main vegetable; salting it draws out water so it stays crisp in the pickle.
- Coarse sea salt
- Draws water out of the cabbage, firming its texture before pickling.
- White wine vinegar
- Provides the acidity that preserves the cabbage and gives it its sharp flavour.
- Whole cloves
- Adds warm, aromatic spice flavour to the pickling liquid.
- Cochineal
- Adds a red colour to the pickle; used only if wanted.
The step that matters
Salting and standing the cabbage. Salt draws water out of the cabbage through osmosis. Draining well before pouring on the vinegar helps keep the cabbage crisp and stops the pickle from being diluted.
