Why it works: Carrot and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓

Cow Heel Soup

Ingredients

Directions

  1. Cut the meats across and place them in a pot with the old fowl and ham.

  2. Stew without any liquid over a very slow fire, stirring to prevent burning.

  3. When the meat begins to stick, add clear beef broth.

  4. Add turnips, carrots, celery, sweet herbs, and bay leaf, then more broth.

  5. Let it stew for about an hour.

  6. Split the cow heel and boil it in some of the broth until tender.

  7. Remove the cow heel and soak it in a stew pan with bread crusts and more broth for 8-10 minutes.

  8. Once the soup is rich, place the crusts in a tureen and the cow heel halves on top.

  9. Pour the soup over and season to taste before serving.
