Ingredients
Directions
Cut very thin slices from the fillet of veal.
Season the slices with white pepper, coarse sea salt, mace, nutmeg, and a little lemon peel.
In a stew-pan, melt a good piece of butter.
Add the seasoned veal and stir continuously until cooked through.
Before serving, mix cream with the egg yolk and add to the pan.
Thicken the sauce with a lump of butter rolled in flour, stirring until ready.
