Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gravy beef
Long simmering breaks down its connective tissue, giving the broth body and rich flavour.
Roasted hen
Adds deep poultry flavour to the broth as it simmers.
Raw ham
Adds salty, savoury flavour to the broth.
Pork sausages
Release fat and savoury flavour into the pot as they cook.
Carrots
Add natural sweetness and colour to the finished dish.

The step that matters

Let the broth boil gently. A hard, rolling boil emulsifies fat into the broth and toughens meat, leaving it cloudy and stringy. A gentle simmer keeps the broth clear and the meats tender.

Swap the mace

How well each one fits the dish's main ingredients (beef, ham, clove, pork, carrot, olive, turnip):

  1. Thymefits better
  2. Marjoramfits better
  3. Celeryfits better
  4. Macethe original

Fit is the average pairing score against beef, ham, clove, pork, carrot, olive, turnip. Candidates are from the same food group and used in at least 100 recipes.
