Whitings, Fried

Ingredients

Directions

  1. Skin the whitings by holding the fish at the back of the head and loosening the skin near the dorsal fin with a small knife.

  2. Pull the skin off from both sides and bend the tail into the mouth, securing it with a small peg.

  3. Dip each fish into beaten eggs, then coat with fine bread crumbs.

  4. Heat cooking fat in a pan and fry the fish until golden brown.

  5. Garnish with chopped parsley and serve with your choice of sauces: Anchovy, Dutch, Shrimp, or Plain butter.
