Croustade of Bread, Garnished with Calves-tails, a LA Roulette

Ingredients

Directions

  1. Scald the calves' tails with the skin on, then cut them into joints.

  2. Parboil the joints in water for 5 minutes, then immerse in cold water.

  3. Drain the tails on a napkin, then place them in a stewpan with carrot, onion, parsley, cloves, mace, and peppercorns.

  4. Moisten with broth or water, adding salt if using water, and boil gently for about 1 hour.

  5. Once cooked, drain the tails again and trim them neatly.

  6. Arrange the tails in the croustade in a pyramidal form.

  7. Pour over a rich sauce containing the button mushrooms.

  8. Garnish the inner edge of the croustade with fluted scallops of red tongue.

  9. Glaze the black truffle and place it on top before serving.
