Turban of Fillets of Rabbits, a LA Financiere

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the fillets from the rabbits and trim them.

  2. Prepare quenelle force-meat using the flesh from the rabbit legs.

  3. Form a cylindrical base with part of the force-meat and let it cool.

  4. Spread a thin layer of force-meat on top of the cylinder.

  5. Arrange the larded fillets around the sides at a slant, with the small ends at the top.

  6. Insert cock's kernels between each fillet and cover them with bacon strips.

  7. Wrap the turban with buttered paper and secure it with string.

  8. Bake in a 350°F (175°C) oven for 1 hour.

  9. Remove the paper and bacon, glaze the fillets, and fill the center with Financiere ragout.

  10. Pour some sauce around the base and serve.
