Cold Raised Pies

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Arrange the pieces of eel in a pie dish in neat order.

  2. Layer with chopped parsley and mushrooms, then add a spoonful of Béchamel sauce.

  3. Cover the pie, seal the edges, and brush the top with beaten egg.

  4. Bake in a 400°F (200°C) oven for about 1.5 hours.

  5. When done, remove from the oven, let cool, and serve on a napkin.

  6. If serving cold, carefully remove the top and decorate with aspic jelly.
