Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Small Nougats, a LA Chantilly
Ingredients
Directions
Prepare the nuts
Scald the filberts, remove the skins, and split each kernel into four lengthwise.
Dry the nuts on a baking sheet in the oven.
Make the nougat
Stir the powdered sugar in a boiler over heat until ready, then mix in the nuts.
Prepare six small oiled dariole molds.
Fill each mold with the nougat mixture, using a small stick to press it into the sides.
Trim any nougat that rises above the edge of the molds.
Turn the nougats out onto a baking sheet.
Serve
Fill each nougat with whipped cream and top with a strawberry before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Filberts
- Provide the main nutty flavor and the bulk of the nougat's texture.
- Powdered sugar
- Melts and sets into the caramel-like body that holds the nuts together.
- Whipped cream
- Adds a light, soft contrast and moisture to the rich nougat.
The step that matters
Stirring the sugar over heat. Powdered sugar melts and then cools into a firm, brittle body only if it is heated carefully and evenly. Scorching gives a bitter, burnt taste, while under-melted sugar will not set properly around the nuts.
Swap the filbert

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
