Ingredients

Directions

  1. Melt the butter in a large stewpan.

  2. Add the veal, ham, onions, carrots, celery, peppercorns, mace, salt, and 1 pint of water.

  3. Cook over high heat, stirring occasionally, until the bottom is lightly browned.

  4. Add half of a scalded calf's head, cheek side down, and fill the stewpan with 14 quarts of water.

  5. Bring to a boil, then reduce heat and simmer for 2.5 hours, skimming regularly.

  6. Remove the calf's head when flexible, then discard the bones and press the head flat.
