Ingredients

Directions

  1. Prepare the galantine as directed in recipe No. 998.

  2. Mix the grated bread crust with chopped pistachios.

  3. Once the galantine is cold, glaze it and sprinkle the bread and pistachio mixture over it.

  4. In a plain oval mold, pour a little aspic to a depth of ½ inch.

  5. Create a rosette with hard-boiled egg whites and truffles, then cover with more aspic to make it 1¼ inches thick.

  6. When the aspic is set, turn it out onto the center of the galantine.

  7. Dress with croutons of aspic around the galantine.

  8. Place a crawfish and a small hard-boiled egg on each atelette at both ends.
